A comprehensive international study examining over 450,000 participants has revealed significant connections between meat consumption and two types of cancer affecting the stomach and esophagus. Researchers tracked dietary habits and cancer diagnoses over an average of 14 years, identifying clear patterns in how different meat types influence cancer risk. The findings, published in the International Journal of Cancer, contribute to growing evidence that dietary choices play an important role in cancer prevention.
The analysis yielded striking results regarding processed meat consumption. Participants who consumed an additional 30 grams of processed meat daily faced a 9 percent increased risk of gastric cancer and a 13 percent increased risk of esophageal adenocarcinoma. Scientists attribute these elevated risks to harmful compounds introduced during processing and storage, including excess salt, which can damage stomach tissue and trigger inflammation that may lead to cancer development.
Surprisingly, unprocessed red meat showed no significant association with these cancer types. However, white meat presented unexpected findings: women consuming 20 additional grams daily demonstrated a 20 percent increased gastric cancer risk, though this pattern did not appear in men. Researchers suggest this disparity may relate to protein metabolism and cooking methods, though further investigation is needed to understand these mechanisms fully.
While the study’s large sample size and extended follow-up period strengthen its conclusions, researchers acknowledge limitations in establishing definitive cause-and-effect relationships. Dietary assessments were conducted only once at the study’s start, potentially missing changes over subsequent years. Nevertheless, these findings align with previous research, reinforcing recommendations to limit processed meat intake for better long-term health outcomes.
